Harvest

Winemaking
The grapes are hand-harvested in the early morning to ensure they arrive at the winery at a low temperature, protecting their delicate aromatic profile. Upon arrival, the bunches undergo careful selection and destemming. Immediately, a gentle, direct pneumatic pressing is performed to extract the highest quality free-run juice, minimizing contact with the skins to achieve the pale color characteristic of modern rose wines.
The resulting must is transferred to stainless steel tanks, where it undergoes a static cold settling process to remove impurities. Once clear, selected yeasts are added. Alcoholic fermentation takes place at controlled temperatures between 13°( and l6°C for 15 days, ensuring optimal retention of citrus aromas such as pink grapefruit and preserving the varietal's natural freshness.
After alcoholic fermentation, the wine is stabilized and clarified through filtration.
